Cranberry Oat Groat Salad

1 cup whole oat groats1/2 cup Wild rice or forbidden wild rice2/3 cup Toasted chopped pecans3/4 cup Dried cranberries1/2 cup Fresh Parsley, chopped1/2 cup Green onions, chopped3 Tbsp Lemon Juice1 Tbsp Honey1 Tbsp Dijon mustard1/2 tsp each Salt/Pepper
Cook oat groats in 3 cups water approx 35 mins til tender but chewy. Cook wild rice in 1 cup water approx 45 mins. Drain excess water from both & add to large bowl. Combine lemon juice, honey, mustard, salt & pepper & add to grains. Stir in pecans, cranberries, parsley & green onions.
