Cauliflower "Fried Rice"

Ingredients
1 small head of cauliflower, riced (grated with a cheese grater)2 tbsp olive oil1/2 medium onion1 tbsp green onion1 tsp salt1 tbsp grated parmasan cheese2-3 cloves garlicsalt and pepper to tasteonion salt to taste
Directions
Cook onion and garlic in olive oil until soft, about 10 min. then add riced cauliflower (by grating cauliflower with a cheese grater) and cover. cook for 10 min. serve with grated parmasan cheese if desired.

Serving Size: makes about 2 cups (using a very small head of cauliflower)
