Super Low-Fat Granola

Brown Sugar, 1.5 cup, packed Salt * Coconut, raw, .5 cup, shredded * Raisins, 1 cup, packed * Maple Flavoring, 1tsp, 1 serving * Vanilla Extract, 1 tsp * *Quaker Oats 100% Natural Whole Grain oatmeal, 9 cup * Pecans, .25 cup, chopped
Mix sugar, water & salt in sauce pan & heat until sugar is dissolved. Add vanilla & maple extracts
In another bowl - mix everything else, except raisins. Pour on sugar mixture & mix until oats are wet & stick together. I added a tad more maple syrup to make it more wet but my coconut was really fine & powdery. I also added some cinnamon. Bake at 350 - when almost done, add raisins. The granola burns easily - watch it closely. It will be soft when comes out of oven but will stiffen when cools.
Serving Size: Makes 18 1/2-cup servings
