Skinny Broccoli Soup

Ingredients
1 med Onion, chopped1 TBSP Olive Oil2 bunches Broccoli, fresh, chopped2 med Carrots, raw, peeled and grated3 small Red Potato, peeled and grated3 vegetable bouillon cubes8 cups water
Directions
Heat olive oil in a large pot. Add onion and cook until softened. Add all other vegetables, bouillon cubes and water and cook until vegetables are tender. Puree with an immersion blender.

May be served with 1 TBSP of grated, low fat cheddar.
