LaRaine's Sweet Potato and Cabbage Stew

Cabbage, red, fresh, 2 cup, shredded Leeks, 2 leek sliced thinCarrots, raw, 1 cup, grated Peppers, sweet, red, fresh, 1 cup, chopped Garlic, 1 tsp mincedPepper, red or cayenne flakes 1 tsp Basil, .25 tbsp Thyme, ground, .25 tsp Celery, raw, 3 stalk, mediumSweet Potato Raw Uncooked 2 small Diced Tomatoes and Green Chilies, 1.5 cup Vegetable Broth, 1 cup Soup, ONION, Mix, Dry, 1 packet
Chop, shred, and dice all vegetables be sure to soak the leeks in water to remove any sand that may be in them.
Spray a skillet with cooking spray and add carrots, cabbage, leeks(drain), garlic ,bell pepper, basil, thyme ,and red pepper flakes (Cabbage Mixture) and cook like you was stir frying them until tender set aside with lid on.
In a large stew pot add 4 cups of water sweet potatoes, celery, and onion soup mix bring to a boil until Sweet potatoes are tender and not over cooked then take a potatoe smasher and mash up the Sweet potatoes still in the pot retaining all the water then add cabbage mixture, tomatoe and green chilis, and vegetable broth return to boil and then simmer 10 mins.
Makes 4 - 2 cup servings
