9 medium carrots1 spanish onion1 red bell pepper2 large zucchini2 large summer squash24 oz baby Yukon gold potatoes1 tbsp Tastefully Simple Garlic-Garlic1/8 cup olive oil2 tsp balsamic vinegarBlack pepper
Cut all vegetables into rustic chunks (don't cut them too small or they could get mushy). In separate small bowl, mix olive oil, balsamic vinegar, and Garlic-Garlic. Drizzle mixture over vegetables. Mix to coat. Sprinkle with black pepper. Bake in preheated 450 degree oven for 30 minutes.
