Mom's Applesauce Oatmeal Muffins

Ingredients
2 c. flour1 c. sugar4 tsp. baking powder1 1/2 tsp salt1 1/2 tsp. cinnamon1/2 tsp. nutmegpinch of cloves2 c. unsweetened applesauce1/2 c. canola oil3 eggs, lightly beaten1 1/2 c. oatmeal
Directions
Preheat oven to 375 F. Prepare muffin tins by lightly greasing or lining with paper cups.


In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves. In a separate bowl, whisk together oil, eggs and applesauce. Add applesauce mixture to dry ingredients just until moistened. Stir in oatmeal.


Fill muffin tins 3/4 full. Bake until toothpick inserted in center of muffin comes out clean (about 18-20 min.).


Makes 18 regular sized muffins.

    I love these muffins ! For me personally, they are quite addictive ! And inexpensive to make ! They are a huge hit in our house. Sometimes I haven't had the unsweetened applesauce around & so I use whatever I have & they still turn out great ( just a tad more sugar in them). Give them a try! - 11/4/11

    really easy. i substitued whole wheat flour, real butter for the oil, and added crushed walnuts and dried cherries! made a vanilla sea salt frosting (just a tiny bit on them)and it transformed it into a muffin/cupcake, great alternative for cupcakes! - 7/3/11

    Good! Did not do the cinnamon & sugar on top, I added it in the mixture based on some of the other comments. I also added vanilla to the steel cut oatmeal & raisins. They came out a bit chewy, but i tried to avoid over mixing. I will make this again. - 1/10/11
