Chicken Tortilla Soup (1 serv = 1 cup)

Ingredients
1 Tbsp Olive Oil3/4 cup Onion, diced3 - 5 clvs Garlic, finely diced2 cans Hunt's Fire Roasted Diced Tomatoes2 tsp Taco seasoning1 can Black Beans, drained and rinsed1 can Campbell's Condensed Tomato Soup2 cans Chicken Broth2 Tbsp Chicken base1.5 cups 1% Milk3 Chicken thigh (skinnless, boneless) cooked and cubeAdd to taste: salt, pepper, cumin, oregano, chili powder, garlic powder, onion powder, cayenne pepper.
Directions
Heat oil over medium heat, add onion and cook until transluscent. Add garlic and cook just a few minutes more (don't let it burn!). Add tomatoes and chicken broth, then use immersion blender to puree. Add black beans and condensed tomato soup, and milk; stir well. Add chicken thighs and simmer up to 30 minutes, stirring occassionally.

This soup can also be made in the slow cooker by adding all ingredients and cooking until heated through.

Serving Size: Makes 10 servings of about 1 cup per serving.
