Dutch Green Potatoes

Ingredients
Potato, raw, 3 large or about 6 cups dicedKale, 2 cup, chopped (1 large bunch)Salt, 2 tsp or to tasteMilk, nonfat, up to .25 cup Butter, salted, 1 tbspyou can also add onion, grated carrot, or other veggiesoptional: sausage such as turkey keilbasa
Directions
Chop the Kale.
Place kale, chopped potatoes and salt in a large pot, with one-two inches of water--you dont want to cover the potatoes, and you dont want a lot left at the end.
Boil until potatoes are soft
Mash potatoes and kale in the leftover liquid with the butter. Add milk as needed to achieve a mashed-potato-consistency. Season to taste. You can eat now, or place in a shallow baking dish, place sausage pieces (split vertically) on top of the potatoes, and bake at 350 until sausage is done--about 45 min. This makes a nice presentation
serve with low-fat mayo as a garnish.
