Nonna's Ham and potato hash

Ingredients
• 2 pats of butter • 1/2 cup boiled potatoes• 1 tbsp powdered onion• 1/2 cup cooked ham• Mrs Dash to taste• dried crumbled thyme to taste• 1/4 cup or less cooked mushrooms• 1/4 cup or less cooked carrots
Directions
Combine ham, boiled pototes, carrots and mushrooms into a food processor and blend together. Do not puree!
Once blended, add in spices and mix so it is incorporated throughout the hash.
Melt butter in an iron skillet over medium low to medium heat. Cook until browned on bottom
When has is just about ready,in separate pan, POACH two eggs
When hash is done, place half amount on each plate
then place poached egg in the middle of hash and enjoy!
