Sweet Potato Soup

Ingredients
10 cups sweet potato, cut into 1 inch cubes2 cups coarsely chopped onion1 tbsp olive oil3 tsp minced garlic2 cups vegetable broth 6 cups chicken broth4 tsp ginger root, grated smallgrated orange zest from 1 small orange (approx 2 tsp)3/4 tsp each ground cumin and salt1/4 tsp ground black pepperPinch ground cloveslight sour cream for topping soup if desiredchopped fresh cilantro as garnish if desired
Directions
Spray shallow roasting pan , add sweet potatoes, onions, olive oil and garlic. Mix well, roast uncovered at 425 for 25 minutes. Stir once halfway through cooking time.
Transfer to soup pot, add broth, ginger root, orange zest, cumin, salt, pepper and cloves. Bring to a boil reduce heat to medium-low and simmer covered for 10 minutes.
Puree soup until smooth using a hand blender or blender. Serve hot.
