Ham, Green Bean & Potato Soup

Ingredients
app. 5-8 baking potatoes, chopped into 1" quarters2 packages beef stock2 packages diced ham4 cans green beans1 medium onion, chopped water to fill pot
Directions
best if cooked lower and longer so flavors melt together!
Start with a little olive oil, saute onions until just tender. add rest of ingredients, turn on medium-low and let cook for at least an hour, for as long as 3 or 4 hours. add stock or water to soup as needed to replace evaporated liquid.
