Wine & Cheese Checkerboards

Ingredients
2 tbsp agar-agar powder (or 6 tbsp agar-agar flakes)¼ c. cold waterZest of ¼ lemon 3 c. slightly sweet, fruity red wine, chilled¼ cup sugar8 oz Morbier or Oka cheese, cubed into 32 pieces
Directions
Dissolve agar-agar in cold water, lemon zest and wine.
Bring to a low boil, and dissolve sugar.
Remove from heat and pour into a shallow dish to about ½ - ¾” depth.
Chill until set.
When gel is fully firm, cut 32 cubes roughly the size of the cheese cubes.
Plate cheese and gel cubes in the design of a checkerboard and serve with fresh fruit.
Alternately, plate checkerboards on crackers or thin slices of pound cake!
