Coconut Brown Rice

Ingredients
1 1/2 cups brown rice (basmatic or jasmine)1 can light coconut milk2 c. water1 t. salt2 T. shredded coconut1 T. oil
Directions
Spread oil in the bottom of a regular sized pot. Add rice, milk, water, salt and coconut. Cook on high until boiling. Reduce heat to low and cook until rice is tender (about 50-60 minutes). Fluff rice and serve.
