5 links (16 oz cooked) mild turkey Italian sausage2 stalks celery, chopped1 onion, chopped3 cloves garlic, minced2 teaspoons dried parsley1 teaspoons Italian seasoning1/4 teaspoon crushed red pepper flakes3/4 teaspoon salt1/4 teaspoon fresh ground pepper1 carton (32 oz) chicken broth1 can (14.5 oz) stewed tomatoes, Italian Style1 can (14.5 oz) diced tomatoes, Italian Style5 oz fresh spinach, chopped1 can (19 oz) cannellini beans, drainedDash of Tabasco or other hot sauce
1. Cook sausage in dutch oven or stock pot, once cooked remove and reserve for later.
2. In the same dutch oven or stock pot cook celery, onion, garlic, spinach, parsley, Italian seasoning, red pepper flakes, salt, and pepper over medium heat until the onions are translucent.
3. Cut sausage into smaller pieces, and add to pot along with the chicken broth, tomatoes, and cannellini beans. Bring to a boil and then simmer on low for 15 to 20 minutes or longer if you want the flavors to meld more.
4. Optionally serve with grated Parmesan cheese.
Serving Size: Makes about 7-8 1-cup servings
