Pulled Pork "Chili"

Ingredients
6 cups cooked pulled pork2 cans red kidney beans2 28 oz cans of diced tomatoes1.5 cups frozen corn2 chipotle chilis in adobe, seeds removedcumin, to taste1 cup diced red onion1 can ro-tel tomatoes with green chiles3 TB EVOOsalt and pepper to taste
Directions
Saute chopped onion over medium heat in oil until softened.
Add meat and warm through, stirring.
Add all other ingredients and cook over medium for 30 minutes, stirring occasionally, until hot.
Reduce heat to low and simmer for a while.
