Sweet Potato Fruit Cake

110g (4oz)margarine110g(4oz) 60%less fat margarine1 cup brown sugar, loosely packed2 eggs1 cup cooked mashed sweet potato cooled (nothing added)1 1/4 cup SR flour (white)1 1/4 cup SR wholemeal flour1/2 tsp Baking powder1 tsp mixed spice1 tsp ground ginger4 Tbs skim milk375g (13oz) mixed dried fruit
Preheat oven 180C
Grease and line a 24cm round cake tin
Cream butter and sugar till light
Add eggs one at a time, beating well
Fold in sweet potato alternately with the flour and spices
Fold in the milk to make a not too soft
Fold in fruit and mix well
Cook in well greased 24cm round pan, lined with baking paper
Bake 1 1/2 hrs at 165C - or until a skewer inserted in the center comes out clean
Remove from oven and Cool on rack
