Carrot Ginger Soup

Ingredients
I'll share the recipe bc it is so easy and oh so yummy! Takes only 30 min: Saute one large onion, 8 cups chopped carrots, and 1 large diced potato. Saute until tender. Add 4 cups (I used low sodium ff) chn broth. Add 2 tbs fresh grated ginger, and 1 tsp nutmug. Simmer for 15 min. Then blend. I used an immersion blender= amazing and add 2 cups skim milk. MmmmmmMMmmmmMMmmmmmm =) ENJOY! Dont forget to add salt and pepper to taste! I also sauteed some firm tofu and added that in last!
