Sweet Potato Coconut Soup

Ingredients
Ingredients:Yams, 2.5 cup (about 3-4 medium)Olive Oil, 2 tbspGarlic, 1-2 cloves, pressedCelery, raw, .5 cup, diced Onions, raw, .5 cup, choppedCurry powder, 1 tbspGaram Masala, 2 tbspVegetable Broth, 3 cupsWater, tap, 1 cupCoconut Milk, 1.5 cup*
Directions
Slice yams about 2" thick and place on baking sheet. Brush the tops with about half the olive oil and sprinkle with salt and pepper. Bake at 350 until soft, about a half hour.
Saute onions and celery in the remaining olive oil. Add garlic and spices, stir well. Peel the yams and add, mixing well.
Add broth, then water, bring to simmer.
Using immersion blender, blend smooth, or pour into a blender to do so,
Return to heat, add coconut milk and return to simmer. Simmer 20-30 minutes.
