Chipotle Chicken Enchiladas

Ingredients
8 Ole low carb tortillas1 pkg Kroger Nacho & Taco shredded cheese1 small onion chopped2 cans Rotel tomatoes (original)Juice of 1 lime1/4 cup cilantro1 Tbsp chipotle powder1/4 tsp cinnamonSalt to taste2 Tbsp minced garlic1.75 lbs chicken breast tenderloinsOlive oil
Directions
Cook cut up chicken in olive oil. Saute onions in olive oil in separate pan. When translucent, add garlic, cinnamon & chipotle powder. Cook till fragrant. Add tomatoes and salt. Cook 10 minutes. Add lime juice and cilantro. Take 1/2 of sauce out and set aside. Mix chicken and rest of sauce together. Spread 1/2 of reserved sauce in bottom of baking dish. Put chicken mixture in each tortilla and fold up ends. Place in baking dish. Cover with rest of sauce and cheese. Broil for 5 minutes or until cheese melted.

Serve with lettuce, tomato, sour cream, cheese dip (Not included in nutritional count)
