Chicken with red pepper and brown rice

Ingredients
1 Lb chicken breast, sliced thin1 1/2 cups diced onion1 cup diced red pepper2 cups instant brown rice1/4 cup lemon juicepepper to taste1 14 oz can low sodium fat free chicken broth1 14 oz can artichoke hearts2 Tbsp Parmesan cheese
Directions
Saute chicken in half of the olive oil, remove from pan. Saute onion and red pepper in remaining oil till translucent. place chicken broth and lemon juice in 2 quart sauce pan and bring to simmer. Add rice, chicken and onion and pepper mixture. Cover and turn heat down to low. Simmer 15 minutes. Add drained artichoke hearts and sprinkle with Parmesan cheese.
