Steffy's Red Shrimp Curry

Ingredients
Red Curry Paste, 2 TbspCoconut Milk, 1 cup Carrots, raw, .5 cup, chopped Onions, raw, .5 cup, chopped Green Peppers (bell peppers), .5 cup, strips Red Ripe Tomatoes, .5 cup, chopped or sliced Leeks, .5 cup Bamboo shoots, raw, .25 cup garlic and ginger to taste*White Rice, medium grain, 2 cup Shrimp, cooked, 6 oz
Directions
heat the pan and add the garlic, ginger, and curry paste. After one minute, add the onion, then the coconut milk and the rest of the veggies. Simmer until the veggies are almost done, then add the shrimp (I use frozen uncooked shrimp for this).

serve over rice
