Cheesy Potato-Corn Chowder

1 onion, chopped1 Tbsp olive oil2 3/4 cup water3 cubes chicken bouillon1 1/2 cups finely chopped potato1 teaspoon salt1/2 teaspoon pepper1/4 cup cornstarch2 1/4 cups skim milk2 1/4 cups frozen corn1 cup 2% milk shredded cheddar cheese
Serves 4 to 6 (nutritionals figured on 4 servings)
Saute onion in oil. Stir in water, bouillon, potato, salt and pepper. Bring to a boil, reduce heat, and simmer 5 to 7 minutes or until potato is tender.
Combine cornstarch and milk, stirring until smooth. Gradually add to potato mixture, stirring constantly. Stir in corn.
Bring to a boil over medium heat, stirring constantly, 1 minute or until thickened. Add cheese. Serve immediately.
