Spinach Mashed Potatoes

1 (10 oz) pkg frozen chopped spinach1 Tbsp minced garlic1 tsp crushed red pepper flakes (optional)6 yukon potatoes, peeled and chopped1/2 cup country crock + calcium1/2 cup fat free sour cream1/2 cup fat free plain greek yogurt1 Tbsp chopped onion1 tsp salt1/2 tsp black pepper1/4 tsp dried dill weed1/2 cup sargento reduced fat cheddar cheese
Preheat oven to 350 degrees F. Lightly grease a medium casserole dish.
Saute spinach in a pan with minced garlic and red pepper flakes if desired. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
In a bowl, mix the spinach, mashed potatoes, margarine, sour cream, yogurt, onion, salt, pepper and dill. Transfer to the prepared casserole dish. Top with cheddar cheese.
Bake 20 minutes in the preheated oven, until bubbly and lightly brown.
