Grilled Vegetables

Ingredients
2 sliced/chopped zuchini - I mix green and yellow2 red bell peppers chopped1 large red onion chopped8-12 oz. sliced fresh mushrooms3 cloves garlic chopped1/4 cup olive oil
Directions
Marinate in olive oil for several hours. Put into grill basket and grill over charcoal until veggies turn crisp. Serve hot - or actually leftovers are great to spice up a sandwich
