Vegetable Fajitas on Whole Wheat Tortillas

Ingredients
12 Carb Balance Whole Wheat Tortillas1 pkg of McCormick Fajita Seasoning Mix2 Zucchini3 plum tomatos2 Green Bell Peppers1 large white onion1 1/2 cups of fresh mushrooms
Directions
Cut Onions and Bell Peppers in to long strips.
Cut all other veggies into bite size pieces.
Use a LARGE pot or I like to use a WOK and heat up on medium high heat.
Spray with Non-Stick cooking spray.
Pour veggies in and let cook for about 10-15 minutes depending on how crunchy you like them.
After the veggies are at the desired consistency, add 1/4 cup of water and the seasoning mix.
Cook for an additional 5 minutes and Serve!

Serving Size: makes 6 2-tortilla w/ 2 TBSP of veggies on each
