Coconut Flour Pancakes - SCD Legal

Ingredients
2 Tbs of Coconut flour1/2 tsp of baking soda1/4 tsp of sea salt1 tsp of pure vanilla extract1/2 Tbs of butter (melted)3 large eggs1 Tbs of butter
Directions
Blend all ingredients with a hand mixer (electric or manual), the coconut flour is very dry and needs a lot of action to combine with other ingredients. Batter should be thin, not thick like a traditional pancake. The batter will rise up as it cooks over medium low heat. I spray a stainless steel omelette pan with oil in a Mr. Misto, heat the pan on Medium heat for 5 minutes then add batter and turn down heat to medium low to prevent sticking.

Serving Size: makes 2.5 pretty large pancakes

    I love this recipe! I needed an extra egg or a touch less coconut flour to get the thin batter called for but that worked fine for me.
