Chicken tinga (with potatoes)

Ingredients
4 chipotles in adobo sauce4 garlic cloves24 oz canned tomatoes3+1 tbsp olive oil1 lb chicken, shredded2 large russet potatoes1 onion1 tsp oregano1 tsp salt
Directions
Cook tomato-chipotle sauce.
Saute potatoes with onions in 1 Tbsp oil until browned (15 min). Add chicken, sauce, season with oregano & salt to taste. Serve on tortillas with avocado & queso fresco.
