Garlic Veggie Mash

Ingredients
1 pound bag frozen cauliflower2 cups instant potato flakes or powder4 oz low-fat cream cheese2 tsp chopped garlic1 TBS chicken bouillon
Directions
Simmer frozen cauliflower florets until they are really soft (about 25 minutes). Drain off all but about 4 cups of water. Blend in, with stick blender, chopped garlic, cream cheese and chicken bouillon powder. Continue blending until mixture is a creamy soup consistency. Add instant potato flakes, stir well and let sit for a few minutes.
