PAM spray1 small onion4 garlic cloves, crushed1 3x1" piece ginger root, peeled4 cups (2 cans) low sodium, fat free beef broth1 whole star anise1 3-4" cinnamon stick2 cups shiitake mushrooms2 packages ramen noodles, no seasoning packet used1 lb. beef eye of round, sliced in thin ribbons1 can bean sprouts
Saute onions, garlic & ginger. Add water, broth, star anise and cinnamon, bring to boil and reduce to simmer 7-10 minutes.Add mushrooms, bean sprouts and simmer 5 minutes. Cook ramen noodles while other simmering, drain, set aside.Add beef for last 30 seconds to minute.Remove star anise, cinnamon and ginger root before serving
