Favorite Vegan Breakfast Tacos

Ingredients
2 oz Gimmee Lean Sausage Style, crumbled4 New potatoes1T french fried onionssage, salt and pepper to tastecooking spray.
Directions
Cook potatoes in microwave until soft, then dice. Spray a heavy skillet w/ non-stick cooking spray. On med heat, cook all ingredients for 5 minutes or until potatoes begin to brown, stirring occaisionally to break up the Gimmee Lean. Keeping it covered with a lid will eliminate the need for a repeat spray in the pan. In a separate heavy skillet, heat the corn tortillas on high heat until they are lightly toasted on each side. Hold wrapped in a cotton towel until serving, to keep hot and soft.
