Greek Lemon Potatoes

Ingredients
1.5 Pounds Yukon Potatoes,Unpeeled, cut into .5 inch pieces1/4 c lemon juice2 1/2 T Extra Virgin Olive Oil2 cloves garlic, minced8 oz filtered water or chicken broth1/2 t oregano1/4 t sea salt1/4 t pepper
Directions
Wash potatoes and cut into cold water. Mix together all the ingredients into a gallon-sized zip-lock bag. Dry the potatoes and add to the bag. Marinate in refrigerator for at least 1 hour, but longer is better. Shift the content of bag every once in awhile.
Preheat oven to 400.
Dump potatoes and marinade into a glass casserole dish. Roast for about 50 minutes, carefully turn twice during cooking. Then, turn up heat to broil and brown the potatoes for 5 minutes.
