Kale with Apples and Onions

2 Tbsp Smart Balance Buttery spread1.5 pounds of Kale, ribs removed, coarsely chopped.2/3 c. water2 medium apples, peeled and sliced1 onion peeled and sliced2 Tbsp Cider Vinegar4 tsp yellow Mustard 1Tbsp honey
Heat spread in Dutch oven over medium heat until liquid. Add apples and onions and saute 5 mins. Add Kale and gently toss until it is bright green, about a minute. Add water, cover and cook; stirring occasionally 3 mins. Stir in apples (unless you've kept them in there) cover and continue cooking 10 mins, until Kale is tender.
Meanwhile, whisk vinegar, mustard and honey in small bowl. Add mixture. Increase heat to medium high. Heat uncovered 3 to 4 mins, until water evaporates.

It's kinda cool that I can give my own critique! I didn't do it for Silver sneakers but I did it tonight! LOVE THIS STUFF!
