High Salt/low histamine: Easy Lentil Soup with Kale

4 cups of (organic) vegetable broth1 cup of washed and chopped kale1 cup of sliced carrots.5 cup of chopped onions1 cup canned green lentils thoroughly rinsed1 tbsp salt2 tbsp chopped parsley for garnish
Spray the bottom of a large pot with extra virgin olive oil and heat to medium. Add chopped onions and saute for 5 minutes. Add carrots and saute for a further 5 minutes, add chopped kale and stir constantly until kale is slightly wilted (about 2-3 minutes). Add broth, salt and rinsed lentils. Cover and simmer for 30 minutes. Serve into bowls and sprinkle with fresh chopped parsley.
