Bran, Oat, Raisin, Flax seed Muffins

Ingredients
2-1/2 c. raisins2 c. water2 c. quick oatmeal2 c. wheat flour2 c. all bran cereal2 tsp. salt2/3 c. flax seeds or meal1 c. optional - sunflower seeds, almonds, nuts, 2 tsp. cinnamon1 tsp nutmeg1 tsp allspice1/2 tsp cloves1/2 tsp pepper2/3 c. brown sugar2 eggs1 c. milk2 tsp. baking soda(dissolved in the milk)1 cup applesauce 1 can crushed pineapple (can substitute 1 can pumpkin)
Directions
Boil raisins in 2 cups water for approximately 5 minutes

Mix dry ingredients in bowl

Mix wet ingredients in larger bowl

Add dry to wet – stir a bit. Then add raisins and the boiling water – stir until just blended – don’t over stir! Let sit five minutes.

Scoop into greased muffin tins.

Bake for 30 minutes at 350°F.

They freeze really well.
