Shrimp and Feta Stuffed Mushrooms

12 large mushrooms2 Tbsp Balsamic Vinegar1 tsp dried basil or 1 Tbsp fresh1/2 tsp garlic powder1/4 tsp smoked paprika1 can tiny shrimp, drained and rinsed1/2 c reduced fat Feta cheese1 small tomato, diced1/4 c dice bell peppers2 Tbsp dice scallions1/4 c plain bread crumbssalt (optional)pepper(optional)
Clean and remove stems from mushrooms. In a sealable plastic bag mix vinegar, basil, garlic, and paprika. Add cleaned mushrooms and shake. Let marinate for at least 1 hour. Preheat oven to 425 degrees. In a small bowl combine shrimp, feta, tomato, bell peppers, scallions, bread crumbs, salt and pepper. Drain marinade off mushrooms and stuff with shrimp mixture. Bake for 15 minutes.
