Apple-Cinnamon Quick Bread

Ingredients
1 cup all-purpose flour1 cup whole wheat pastry flour1/4 cup sucanat1/4 cup granulated sugar1 1/2 teaspoons baking powder1/2 teaspoon baking soda1 teaspoon salt1 teaspoon ground cinnamon1 tablespoon lemon juice1 cup coconut milk1 large egg1/4 cup applesauce
Directions
Preheat oven to 350.
Spray loaf pan with non stick cooking spray.
Put lemon juice in measuring cup and then add enough milk to make 1 cup. Set aside.
Combine dry ingredients in a large bowl.
Mix egg, applesauce and milk in separate bowl.
Combine wet with the dry and mix til moistened.
Pour into loaf pan and bake 40-45 minutes.
