2 cups of quinoa (hot or cold, your preference)1 can black beans, rinsed and drained1 can corn, drained2 tablespoons extra virgin olive oil2 tablespoons white vinegar2 tablespoons chili powder1 tablespoon garlic powdercayenne pepper to taste (optional)salt & pepper to taste (optional)
Combine in a bowl two cups cooked quinoa, black beans, and corn in a bowl. Stir in the olive oil, vinegar, chili powder, garlic powder, cayenne pepper, and salt and pepper. Serve.
