Falafel Balls (adapted from Hungry Girl)

Ingredients

1 15 oz. can of reduced sodium garbanzo beans2/3 of a medium white onion chopped very finely1/4 cup whole wheat flour1/2 tablespoon cornstarch3 tablespoons finely chopped parsley1 1/2 tablespoon chopped garlic1 tablespoon chopped cilantro1/2 tablespoon ground cumin1/4 tablespoon paprikadash of pepper
Pre-heat oven to 375 degrees.
Place all ingredients in a large bowl and give them a good stir. Using a potato masher, mash well.
Spray baking sheet with olive oil nonstick spray.
Form mixture into 15 ping pong sized balls and lightly spray the tops with nonstick spray.
Bake for 15 minutes. Remove from the oven and turn, reshape if needed. Return to oven and bake until golden brown, about 10-15 more minutes.
Let cool for at least 5 minutes.
Balls can be froze for up to three months. Just pop them in the microwave for about a minute!
