Spinach & Tomato casserole

2 tbsp extra virgin olive oil1 cup chopped green onions1 cup chopped mushrooms2 Jalapeno peppers5 cloves garlic1/4 cup long grain white rice1 can (14.5oz) Italian style diced tomatoes1 tsp basil1 tsp oregano1 tsp paprika2 cups chopped spinach (fresh)
In sausepan add 1/4 cup rice and 1/2 cup water. Heat to boiling.Ccover and cook on low 20 minutes or till rice is done.
Chop onion, mushrooms, garlic, peppers.
Heat olive oil ad add chopped ingredients.
Cook 5 or so minutes (till heated)
Add rice, tomatoes,basil, oregano, and paprika.
Stir then add chopped spinach.
Cover and cook on low till heated thru.
Serving Size: makes 6 1/2 cup servings
