Gluten Free Lasagna

Ingredients
1 lb Ground Turkey1 cup Celery1 cup Carrots1 cup Onion1 can of Mushrooms1.5 cups Cauliflower2.5 cup (1 jar) of pasta sauce1 can Tomato soup1.5 500ml of cottage cheese (drained)3 egg whites5 Lg Baby Zucchini4 oz Shredded Cheddar Cheese
Directions
Brown Ground Turkey, add Celery, Carrots, Onion, Mushrooms, Cauliflower, Pasta Sauce, can of tomato soup, let simmer. Slice zucchini lenght wise (this will replace the noodles) set aside. Mix cottage cheese and 3 egg whites add a little bit of pepper to taste. now layer as you would a regular lasagna then add grated cheese to top bake until cheese is melted/golden brown
