Lentil Soup with collards (or other greens) and Ham (Optional)

Ingredients
2 T olive oil3 medium carrots diced3 medium celery stalks diced1 large onion diced3 cloves of garlic diced1 C lean ham diced (optional)8 C water2 C lentils, rinsed and picked over1 t thyme dried or 2 t fresh2 C tomatoes diced1.5 t balsamic vinegar10 Oz. collard or other greens chopped ( buy them already chopped in a bag)salt and pepper to tasteNote: You may not need much salt if you add the ham. Also, don't add salt before the lentils are cooked and if you add pepper early, the effect may be much stronger.
Directions
Heat the oil in a soup pot that can hold about 15 cups of liquid. Add the carrots, celery, onion, garlic and ham.

Cook on medium high until tender and just starting to color, about 5 minutes.

Add the water, lentils, tomatoes and thyme.

Bring to a boil then reduce the heat and simmer until the lentils are tender (about 40 minutes)

Stir in balsamic vinegar, salt, pepper and greens. Cook until greens are tender.

Serve as a lunch or main course for your dinner. Makes about 10 one cup servings.

    I used these ingredients but made it slow cooker style - no sauteeing but just chopping and simmering - very good! I did steam my Swiss chard in the microwave first and threw it in about 1/2 hour before eating. - 6/29/10
