Red lentils and Aubergine curry

Ingredients
Onions, raw, 1 medium *Aubergine, 1 lentils, red split, uncooked, 175 gr *Vegetable Stock 600ml *Blue Dragon Coconut Milk Light 200ml Garlic, 2 cloves Curry powder, 2 tbspcoriander leaf
Directions
soften the onion and garlic, then add the curry powder, cook for about 2 mins.
Add the aubergines cubes, lentils and stock. Bring to boil, then simmer for 30mins.
add coconut milk and coriander, heat through and serve.
