8 chicken legs (drumsticks) Salt and pepper2 onions, chopped1 tablespoon ground corriander4 cloves of garlic, crushed1 tin reduced fat coconut milk1 stalk lemongrass1 tablespoon soy sauce4 tablespoons fresh corriander, finely chopped
Brown the chicken in a pan. Then add all other ingredients to the pan and mix well. Place all ingredients in a baking tray (or leave in pan if ovenproof) and cook in an oven for around 45 minutes at 180°C . I also like to stir some more fresh corriander in at the end!
