Cabbage and Chicken "Spring" Rolls

Ingredients
Filling:2.5 ounces shredded chicken1/4 cup shredded carrots2 tbls crushed pineappleSalt (to taste)Mrs. Dash Lemon Pepper seasoning (to taste)4-5 cabbage leaves1/4 cup brown rice
Directions
Mix chicken, carrots and pineapple. Add salt and seasonings to taste.

Prepare cabbage leaves by heating in microwave for 10-20 seconds, until pliable.

Divide filling among cabbage leaves, roll up, using a toothpick to secure, if needed.

Heat rolls in microwave for 30-60 seconds, until filling is heated thru.

Serve with 1/4 cup brown rice as a side.
