Carolina BBQ Sauce Braised Pork Chops

2 teaspoons olive oil1/2 pound boneless pork chop2 medium carrots, peeled and chopped2 stalks celery, chopped1/2 onion, chopped1 clove garlic, minced2 slices bacon, chopped1/2 cup Carolina style (mustard-based) BBQ sauce1/2 cup white wine
1. Preheat oven to 325 degrees. Heat oil in oven-safe saute pan. Salt and pepper pork chops. Sear pork chops on all sides, then set aside on a plate.
2. Add carrots, celery, onion, garlic, and bacon to to saute pan and cook until veggies are soft (about 10 minutes). Add white wine to pan, if mixture becomes too dry.
3. Place pork chops into veggie mix and top with BBQ sauce.
4. Place saute pan in oven and cook for 15 minutes. Turn pork chops over and cook for another 15 minutes.
5. Serve over mashed potatoes.
