Lisa's Egg Beater Veggie Omelet

Ingredients
Egg Beaters, diced fresh bell peppers (multi-colored), mushrooms
Directions
Melt butter in saute' pan over medium heat. Add diced peppers & mushrooms. Cook 1-2 minutes until tender. Add egg beaters and cook until eggs are firm, flipping once after eggs are nearly fully set. Top with salsa.

Serving Size: Makes 1 small omelet
