HCG Phase 2 - Beef Goulash with Aspiration Broccolini

1 large shallot sliced2 small cloves of garlic1 1/2 tsp caraway seeds2 Tsp paprika1/2 tsp smoked paprika1/2 tsp dried thyme1 tsp fresh rosemary1 TBS fresh chopped parsley leaves1 TBS cider vinegar2 cups beef stock1 lb filet mingon sliced thin1 tsp kosher salt1/2 tsp cracked black pepper2 tsp olive oil2 bunches Aspiration broccolini
Bring a 2qt pot of water to boil and cover and set aside. Meanwhile, in a small pot cook the shallots and garlic browning them and adding water to keep from scorching. Add the caraway seed and the rest of the dried herbs and tomato paste. Deglaze with the vinegar and some more water. Add the stock and reduce by half, 10 minutes.
In a hot skillet, sear off the beef and season with salt and pepper. Stir frying the beef to brown it quickly. Add to the Sauce and bring to a boil. Deglaze the beef pan with a bit of water and add that to the pot also.
Bring the pot of water back to a boil and blanche the Asparation so that it is still bright green and has a bit of a bite.
Place 1 cup of Asparation on a plate and top with 1/4 of Goulash per serving. Season with the fresh chopped parlsey.
Serving Size: Makes 4 Servings

I used venison so cooked it in the slow cooker for tenderness and used 1/2 can tomato paste since I didn't see an amount given in recipe. It was good but really needed something - more spice of some kind so will definitely make this again and adjust it to my taste. Great idea for a low carb meal! - 7/16/17

This was pretty good. The instructions mention tomato paste, but it isn't in the ingredient list, so I used 8 oz of tomato sauce instead. The liquids cooked down nicely to make a good sauce. I expected more flavor from all the spices, but it was a bit blander than we like. I'll try it again though. - 3/3/17
