South Beach Vegetable Quiche Cups (Egg Whites only)

Ingredients
10 oz frozen spinach3/4 cup low fat shredded cheddar cheese1 cup egg beaters (egg whites)2 large mushrooms, diced1/3 large green pepper, diced
Directions
Pre-heat overn to 350 degrees.

Microwave spinach for 2 minutes, then drain. Mix all ingredients in large bowl. Line cup cake tin with foil cups, and spray cups with cookin spray. Spoon mixture evenly into each cup, and bake for 20 minutes (or until toothpick comes out clean)

Serving Size: Makes 6 servings, 2 quiche cups per serving
