One skillet Chicken Cacciatore (Olive, tomato, onion, garlic, and chicken!)

Onion- one medium onion sliced into ringsGarlic- one head garlic cleaned and coursely chopped28 Kalamata olives- pitted Mezzetta or brand of choiceOlive oil- 2 tbsDiced tomatoes- one 15 oz can with juiceChicken- one breast, leg, and thigh skinned and bonedthyme- 1 tsp driedparsley- 1 tsp driedChilli pepper- 1 dried Chilli with seeds
Prepare all ingredients. Remove skin and bones from chicken and cut into approximately one ounce medallions or chunks. Heat olive oil over medium heat and add garlic and onion, sautee 3-5 minutes. Add chicken and turn to sear all sides. Add tomatoes with juice, olives,thyme, parsley. Break open or cut chilli with scissors into small pieces and allow seeds to fall into skillet. Stir. Simmer for 20 minutes. Serve over rice, quinoa, pasta or eat as is.
